Freeze drying is a revolutionary and the most gentle method of drying fruit. Thanks to this method, the fruit retains its original appearance, natural full flavour and aroma. Approximately 6-7 kg of fresh fruit are used per 1 kg of freeze-dried fruit.

Mango has oval shape and its skin has many colours ranging from green, yellow, orange, red and deep purple. In the centre of the fruit is a flat, oval and non-edible seed covered with hard fibres. Mangoes have a very specific flavour, and may resemble a more aromatic peach.

Do you know how freeze-drying works?

In a drying chamber, the fresh fruit is deep-frozen to -100 °C. Then comes the first stage of drying. The temperature is raised back to zero and, thanks to a vacuum of 50 to 100 Pa, the water contained in the fruit is gradually evaporated and collected in the condensing chamber. The last part of the freeze-drying process removes the remaining moisture and gives the fruit its crisp consistency.

Dried mangoes have a wide range of uses:

• suitable for muesli, breakfast porridge and yoghurt
• on its own or in combination with other freeze-dried fruits, it serves as a quick and nutritious snack
• due to its nature, it can also be used in RAW recipes
